You are absolute...Thanks for your question, Leslie! You are absolutely correct that the jam pot should be non-reactive. I completely forgot to mention this important fact. I will make an edit asap. However, my tamale steamer that I use for big jobs is aluminum. I am only using this for processing the closed jars. The tamale steamer has stained, but there have been no problems with the jars, lids or rings. About wiping the rim - I do use a clean rag that is dipped in the boiling water. Some recipes say to use a damp paper towel, but being a fusser about waste, I seldom have paper towels in my house. Processing in the boiling water bath for 10 minutes will take care of any bacteria and/or mold that may have been introduced. That's why I never do the open-pot method, where just the change of the jam temperature causes the lid to seal as the jam cools. I've eaten plenty of jam made that way because my mom and grandma used that method. The boiling water bath is the way to go.
